Cozy up on the couch with a comforting bowl of chili worthy of movie night. Protein-packed with black beans and quinoa and loaded with veggies, you’ll be left feeling fully satisfied. It’s completely irresistible when served with a cold bottle of Coca-Cola Classic.

YIELD: 12 servings      TOTAL TIME: 30 minutes      ACTIVE TIME: 15 minutes

INGREDIENTS

3 tablespoons olive oil

1 onion, chopped

3 garlic cloves, minced

1 red bell pepper, chopped

1 tablespoon cumin

1 1/2 tablespoons chili powder

2 teaspoon dried oregano

1 pound ground turkey

1 large sweet potato, peeled and diced

2 zucchini, sliced

2 cans black beans, drained and rinsed

1 cup quinoa

1 1/2 cup chicken stock

1 (28 oz) can crushed tomatoes

2 cups frozen corn, thawed


Toppings

1 cup Cilantro leaves

4 Green onions, sliced

1 ½ cups Sour cream

1 ½ cups Shredded cheese

DIRECTIONS

Heat a large pot or dutch oven over medium heat and add the oil.

Stir in the onion, garlic and bell pepper, season with salt and pepper and cook until soft for 5-7 minutes. Add the cumin, chili powder, and dried oregano and cook for 1 minute.

Stir in the ground turkey and cook while stirring until browned, about 6-8 minutes.

Add the zucchini, sweet potato, black beans, quinoa, vegetable stock and crushed tomatoes.

Bring to a boil and then turn down and simmer for 20 minutes, in the corn in the last 5 minutes of cooking.

Serve topped with cilantro, green onions, sour cream, and shredded cheese.
