00:32 - shoulder this is about eight pounds salt

00:36 - pepper a whole bottle

00:40 - you can hear that sizzle of cherry coke

00:43 - that's going to be my marinade it's like

00:47 - some brown sugar paprika

00:50 - onion powder chili powder and

00:54 - apple vinegar basically all the

00:57 - sweetness in the coke

00:58 - the apple vinegar all the spices that

01:01 - get rubbed in here

01:03 - are gonna permeate in the refrigerator

01:05 - overnight

01:06 - and then in the morning we're gonna put

01:08 - it into the oven

01:09 - about 325 degrees for three to four

01:13 - just let it slowly cook and mold and

01:16 - meld and get all happy

01:17 - that goes into the refrigerator cupboard

01:21 - and all i've done is pull the pork away

01:25 - so i'm going to take the picked pork

01:29 - into my pot over here and i'm just going

01:32 - to render it down in other words

01:34 - warm it up let it do its thing

01:38 - i'm going to take a couple of white

01:39 - onions so i'm now going to make a small

00:29 - the avocados we're gonna make sure

00:31 - that they're a little bit firmer than

00:32 - normal why because we're gonna peel and

00:34 - squash them

00:35 - but look pretty straightforward so we

00:38 - start all in half

00:40 - i'm gonna do four of these and the fun

00:42 - part about guacamole is

00:44 - it can stay for a week in the

00:45 - refrigerator with lots of acid

00:48 - it'll keep it nice and vibrant twist we

00:50 - take out the stone

00:51 - into a bowl quickest way spoon down

00:54 - through the flesh peel it out into the

00:58 - bowl

00:58 - we're gonna smash that up using a whisk

01:07 - we keep the hairy end on and we go three

01:24 - take the knife and just roll the flesh

01:28 - we're just going to dice now the reason

01:33 - is if we're going to cook it it cooks

01:35 - evenly or if we can eat it

01:37 - it eats evenly so that's all my tomato

01:40 - i'm going to use a little cilantro we

01:42 - push against the knife

01:45 - then we need a little bit of heat

01:46 - jalapeno a little goes a long way

01:50 - don't touch your face when you do this

01:52 - please into my bowl now with the avocado

01:55 - onions goes our tomatoes

01:57 - cilantro jalapeno

02:02 - just smush it up a little bit here a

02:04 - little bit more salt

02:05 - a bit more pepper and the king of juices
